Brioche Buns

The brioche buns are soft, fragrant, delicately sweet, small buns for the buffet to be filled with sweet or savory fillings. Try them with butter and fruit jams, hazelnut cream, or cold cuts and cheeses. The brioche buns are delightful bites perfect for enriching the bread basket.

Ingredients

  • 1 1/4 cups Manitoba flour
  • 2 cups Type 1 flour
  • 2 tsp fresh yeast
  • 1 1/2 tbsp sugar
  • 3/4 tsp salt
  • 1/2 cup milk
  • 1/2 cup water
  • 1 egg

Steps

  • Crack the egg and beat it. In the mixing bowl, add water and milk and dissolve the fresh yeast in it. Add sugar, flours and start kneading the dough with the hook, then add the egg and finally the salt. Knead until you get a nice smooth and homogeneous dough ball. Transfer it into a bowl, cover it, and let it rise for two hours.

    After the resting time, place the dough ball on the work surface and divide it into 14 parts of approximately 50 grams each. Shape them into round buns and place them in the dedicated bun pan (or on a baking tray lined with parchment paper). Cover them and let them rise for 30 minutes.

    Preheat the oven to 375°F and bake the buns for 20/25 minutes or until they are nicely golden.

    If you like, you can brush them with a beaten egg before baking.
