Sweet chocolate and hazelnut salami is the treat that makes everyone feel like a child again… I remember my mom and grandma making it often for the delight of children and grandchildren. The recipe I’m sharing was found among the yellowed pages of an old cookbook. And if I recall correctly, it was written by a friend of my mom’s thirty years ago.

Ingredients for Chocolate Salami with Hazelnuts
- 10.6 oz dry cookies
- 3.5 oz unsweetened cocoa powder
- 3.5 oz butter (soft)
- 3.5 oz chopped hazelnuts
- 2.6 oz sugar
- 1 oz rum
- 1 egg
- 1 egg yolk

Preparation of Sweet Salami
First, crumble the dry cookies using your hands or a rolling pin. Set them aside in a bowl.
In another bowl, combine the soft butter, sugar, rum, the yolk, and the egg. Mix very well until obtaining a homogeneous mixture.
Add the sifted cocoa, mix. Then add the dry cookies and chopped hazelnuts.
Mix all the ingredients with your hands. Transfer the mixture onto a sheet of parchment paper and shape it into a roll. Wrap the paper around it and let it rest in the fridge for a couple of hours.
NOTES
Store in the refrigerator for a couple of days.
Before slicing, let it sit at room temperature for a couple of minutes, otherwise it will crumble when cut.
Instead of rum, you can use cognac or brandy.
If you don’t want to use raw eggs, use pasteurized eggs available at the supermarket. Use 60 grams (2.1 oz) of whole egg and 18 grams (0.6 oz) of yolk.
