Hazelnut filled cookies are a perfect accompaniment for after-meal coffee. Rustic, crunchy, and fragrant, they are also delicious on their own. Because when shortcrust pastry is done right, it’s good in every way. For the filling, I used whipped cream and 100% hazelnut butter, but hazelnut cream is also perfect. Try the hazelnut filled cookies: they are delightful, I guarantee it!

Ingredients
With this amount, I made 26 filled cookies, and the rest of the dough I used for other types of cookies.
- 2 1/2 cups all-purpose flour
- 1/2 cup hazelnut flour
- 3/4 cup butter
- 1 cup powdered sugar
- 1 egg

- 1 Perforated Baking Tray
- 1 Rolling Pin with Thickness Rings
- 1 Pastry Bag
Steps
It is important that the butter is cold from the refrigerator and cut into small cubes and that the eggs are at room temperature.
Place all ingredients into the stand mixer and work with the paddle attachment until the ingredients are well combined and form a ball. Transfer it to the work surface, shape into a rectangular block, wrap it in plastic wrap, and place it in the refrigerator for a couple of hours.
After resting, roll out the shortcrust pastry with the rolling pin to a thickness of 1/5 inch and cut out the cookies (use the sweet home cutter on one side to cut the cookies with a heart and the opposite side to cut the whole cookies). Place them on a perforated baking tray and return them to the refrigerator for 15 minutes.
Bake the cookies in a preheated oven at 356°F for about 15 minutes.
Whip the cream to stiff peaks and add the 100% hazelnut butter or hazelnut cream. Transfer the resulting cream into a pastry bag and distribute it on the whole cookies. Close with the open cookies and serve immediately.
Notes
If not consumed immediately, these cookies can be stored in the refrigerator for a couple of days.
