Preparation Steps for Potato Salad with Zucchini and Smoked Salmon
We start by preparing the potatoes, washing them, covering with cold water in a pot, bringing to a boil, and cooking for about 30 minutes, until well cooked. Choose small ones so they cook quickly and evenly. Drain and let them cool for a moment, then peel them while still warm and let cool.
Prepare the zucchini, cut into cubes, and chop an onion to sauté over low heat in a pan, add the zucchini, season with salt, and cook covered over medium heat. At the end of cooking, add the salmon cut into strips in the pan off the heat.
On a cutting board, also cut some cherry tomatoes.
When the potatoes have cooled, cut them into chunks, place in a bowl, add the cooled zucchini with salmon, and also the cherry tomatoes, a bit of fresh mint, a bit of lemon juice, and mix well before serving, if you like with a little salt and olive oil and our potato salad with zucchini and smoked salmon is ready to serve.
