The gorgonzola, coppa, and fig sandwich is a feast of flavors: the strong and slightly pungent taste of the cheese, the sweetness of the figs, the delicacy of the coppa, and the homemade bread prepared with sourdough. Because, as I see it, a sandwich is never just a simple sandwich. And that’s why I added a final touch with Tears of Onion from Valdelsa by Gusto Toscano, a product I could never do without, a small Tuscan excellence I am proud of. Ingredients
- 2 slices homemade sourdough bread
- 5.3 oz gorgonzola
- 6 slices coppa
- 2 figs (large)
- to taste Tears of Onion from Valdelsa

- 1 Bamboo Cutting Board
- 1 Spreader Knife
Steps
Toast the bread. Wash the figs, pat them dry gently, and slice them (I preferred to remove the skin). As soon as the bread is ready, spread the gorgonzola on one slice. Add the coppa slices, the fig slices, and finish with a couple of teaspoons of Tears of Onion from Valdelsa. Close the sandwich with the other slice of toasted bread and serve it hot.
