Steps for preparing marinated onions
Clean and slice a large Tropea red onion. Put it in a bowl and season with chili pepper, salt, and oregano. Cover with wine vinegar and mix.
Let the onion marinate in the vinegar for a few hours. When it is visibly changed in color, drain it from the vinegar and season it with a bit of olive oil. If desired, you can add other spices like curry, black pepper, or even a bit of licorice goes great.
Enjoy the marinated Tropea red onion on its own as an appetizer or as a side dish to meat or fish. It’s great for enriching potato salads, eggs, fish, or meat, or rich summer salads of pasta, rice, or vegetables and legumes.
You can also prepare a large amount and leave them in the fridge in the vinegar, to be seasoned as needed with olive oil.
