After making the watermelon semifreddo I immediately had to try to make a melon version and so it was ☺️. Obviously, if you like melon, you will adore this dessert! A very simple and quick recipe to prepare that we can make well in advance and keep in the freezer until needed! I find semifreddos and ice cream cakes truly brilliant in the summer because they are quick to make, require no baking, can be prepared many days in advance, and are appreciated by everyone during these hot days!

Ingredients for the Melon Semifreddo:

  • 1/2 cup sugar
  • 1 cup melon
  • 1 cup whipping cream
  • 5.3 oz mascarpone

Steps

The preparation of the melon semifreddo is very simple and quick, watch the video HERE.

  • First, we need to clean the melon and chop it finely. Add the sugar, mascarpone, and cream, and whip until you get a smooth, creamy mixture. Put the mixture in a large mold or two small ones (I used silicone molds; otherwise, you must line them with cling film to facilitate removal after freezing).!

  • Level with the spatula and place in the freezer for a few hours or until needed

  • Enjoy your meal!
