Cherry Tomatoes with Salted Ricotta Sicilian Salad

The fantasy of cherry tomatoes with salted ricotta is a Sicilian salad based on tomatoes seasoned with salted ricotta.
A cold dish that is easy and quick to prepare and can be served as an appetizer.

To make my salad more lively, I used colorful cherry tomatoes:
• red;
• orange;
• yellow;
• dark;
crunchy, sweet, and juicy, but common small-sized cluster tomatoes are perfectly fine.
! Alternatively, use a mix of cherry and grape tomatoes to bring a salad of cherry tomatoes with different textures and flavors to the table.

I completed it with a sprinkle of sheep salted ricotta, keep this in mind when counting the protein and fat components in the entire meal.

Ingredients

  • cherry or grape tomatoes (colored or common small-sized cluster tomatoes)
  • to taste basil
  • 1 pinch salt
  • 1 pinch mixed peppercorns (with grinder)
  • 1 drizzle extra virgin olive oil (raw)
  • to taste salted ricotta (grated)
  • to taste Tropea onion

Suggested Tools

  • 1 Knife
  • 1 Cutting Board
  • 1 Colander
  • 1 Bowl or Salad Bowl

Preparation

  • Carefully wash the tomatoes.
    Trim and remove the stem part if needed.
    Cut each tomato vertically in half or into quarters.

    Select and wash the basil leaves.
    Let them drain in a colander.
    Dry them on a paper towel.

    Place the tomatoes in a bowl or salad bowl and season with:
    • salt;
    • pepper;
    • basil;
    • a drizzle of oil;
    and mix.

    Grate salted ricotta to taste over the cherry tomato salad.

    Plate it up.
