Couscous with Tomatoes and Sausages summer recipe, easy and quick.
In this season, I always look for easy and quick recipes, but especially fresh ones! This is a dish I love to make when the tomatoes in my garden start to ripen. My son Matteo goes crazy for it. He often asks me to make it for him.
To prepare this recipe, I usually use pre-cooked couscous, beefsteak tomatoes (nice and ripe and juicy – I like them to release their juice), sausages, Taggiasca olives (green or black olives in bags are also fine if you prefer) and a pinch of chili (I find it gives it an extra kick). If you don’t like sausages, you can substitute them with regular sausage or even leave them out. It’s a matter of taste.
As I mentioned before, it’s a quick recipe. While the sausages and couscous are cooking, I prepare the tomatoes and mix everything together, seasoning with extra-virgin olive oil, salt, and a pinch of chili. Curious to see how I prepare it?

Preparation of Couscous with Tomatoes and Sausages summer recipe
Making the summer Couscous recipe is very simple. First, prepare the couscous according to the instructions on the box.
Bring a cup of salted water to boil. Remove from heat and add 1 tablespoon of extra-virgin olive oil and a cup of couscous grains. Stir immediately and cover with a lid: let it rest off the heat for 5 minutes.
After the 5 minutes have passed, fluff the couscous grains with a fork and set aside.
In the meantime, place the sausages on a plate and microwave them at full speed for about 90-120 seconds, until well cooked. Use your judgment. Then, cut them into pieces.
Next, wash the tomatoes, dry them with a clean towel (or paper towel) and cut them, first into slices and then into cubes.
In a container, pour the cooked couscous and add the diced tomatoes (with their juice), olives, and chopped sausages
Season with extra-virgin olive oil, salt to taste, and a pinch of chili powder (if you like a slightly spicier note: we love it!).
Mix and let it rest in the refrigerator for at least one hour.
