The potato, green bean, and bacon frittata is a simple and delicious second course. When you don’t know what to prepare, or when you have ingredients in the fridge that you absolutely need to use, a frittata is always a perfect solution. Ingredients
- 6 eggs
- 3.5 oz green beans
- 7 oz potatoes
- 5 slices rolled bacon
- to taste salt

- 1 Microwave Steamer

- 1 10-inch Baking Dish
Steps
Peel the potatoes, slice them thinly using a mandoline, and steam cook them (I microwave them in a steam container at 900 W for 12 minutes).
Trim the green beans, wash them, cut them into pieces, and boil them in salted water for 5/8 minutes.
In a bowl, beat the eggs with a whisk, season with salt, add the green beans and potatoes, and mix. Transfer the mixture into a 10-inch baking dish or tart pan (if not non-stick, use parchment paper), top with rolled bacon, and bake in the oven at 356°F for about 25 minutes.
