Pan di Stelle Ice Cream Cake
In summer, everyone’s favorite cakes are the ice cream ones ☺️ They are very easy to make, require no baking, and can be stored in the freezer for a long time, so you have a dessert ready at any time! I chose to make a Pan di Stelle ice cream cake because my husband loves it, and I personalized it by adding a central layer of dark chocolate pieces, but if you want, you can also replace the chocolate with a layer of Pan di Stelle spread!

Ingredients for the Pan di Stelle Ice Cream Cake:
9-inch mold
- 7.8 oz cookies (Pan di Stelle)
- 2 cups whipping cream
- 3.5 oz mascarpone
- 5.3 oz sugar
- vanilla
- 1.8 oz dark chocolate
Steps
The preparation of the Pan di Stelle ice cream cake is very simple and fast, watch the video HERE.
Combine the mascarpone, cream, sugar, and vanilla, then whip with a mixer until you obtain a thick and homogeneous cream.
Place a layer of cookies upside down on the bottom of the mold. (I recommend using a silicone mold, otherwise cover it with cling film to make it easier to remove the cake). Add a layer of cream (about half), place pieces of chocolate and some crushed cookies. Cover with the remaining cream (about half)
Level well then add the final layer of cookies. Put in the freezer for a few hours. Then remove the mold and decorate as desired!
