Pasta with Zucchini Cream and Ragusan Caciocavallo

Pasta with zucchini cream is a simple and quick first course.

The light zucchini cream, easy and tasty, is prepared with grilled zucchinis.
I prepared my pasta with zucchini cream using whole wheat farfalle.
Delicious with a handful of coarsely grated Ragusan caciocavallo.

You can turn the pasta with zucchini cream into a complete dish by adding the cheese amount specified in your meal plan.

The zucchini is a vegetable rich in water.
The success and consistency of the cream strongly depend on the freshness and quality of the vegetable, choose small and tender zucchinis.

Ingredients

  • 5.6 oz Whole Wheat Farfalle
  • 2 zucchinis
  • to taste basil
  • 1 pinch salt
  • 1 pinch mixed peppercorns (with grinder)
  • to taste lemon juice
  • 1 drizzle extra virgin olive oil (raw)
  • to taste caciocavallo (coarsely grated Ragusan)

Preparation

  • Wash the zucchinis thoroughly without removing the peel and slice them into rounds.

  • On grill pan – grill – griddle.
    Heat the griddle and grill the zucchinis on both sides.

  • Wash the basil leaves and dry them with a paper kitchen towel.

  • Pour into the blender:
    – the grilled zucchinis;
    – the basil leaves;
    – a pinch of salt;
    – a pinch of pepper;
    – the lemon juice;
    – a drizzle of raw oil;
    and blend until smooth.

    Light Zucchini Cream
  • Coarsely grate some Ragusan caciocavallo.

  • Cook the pasta, rinse it under running water and drain it.

    Season the pasta with zucchini cream cold or in a pan on low flame just enough to warm it slightly.

    Plate it.
    Grind some more pepper.
    Top with coarsely grated Ragusan caciocavallo.

    Your pasta with zucchini cream and Ragusan caciocavallo is ready.

Storage, tips, and variations

As an alternative to basil, you can flavor with mint or parsley.
Adding almonds or pine nuts can give a thicker consistency to the cream.
As an alternative to Ragusan caciocavallo, you can finish with Grana or Parmesan.

You can use grilled zucchinis prepared previously.

Considering the low oil content:
– prepare the light zucchini cream right before using it or shortly before.
