The air fryer zucchini rolls stuffed and breaded are a tasty and light appetizer: grilled zucchini, deli meats of your choice, a bit of classic or smoked provola, a breading made of just breadcrumbs, and a quick cook in an air fryer. Easy, quick (or almost). For my air fryer zucchini rolls, I chose to use a bit of mixed deli meats I had opened in the fridge, but ideally, they should be stuffed with cooked ham. - 2 zucchini (grilled)

Steps
Wash the zucchini, dry them, remove the ends, and slice them with a mandoline. Grill them for a few minutes on a slightly oiled grill pan on both sides. Stuff each zucchini with the chosen deli meats and provola, then roll them up. Coat the rolls in breadcrumbs, ensuring it adheres well, and place them on the air fryer rack lined with parchment paper. Spray the rolls with oil, season with salt, and cook at 356°F (180°C) until they are golden brown and the cheese has melted. This will take about ten minutes.
