Pasta with Cauliflower

Pasta with Cauliflower is a typically winter dish and is great for using up cauliflower, a vegetable not much appreciated in my house, but if prepared in the right way it can change the mind of even the most skeptical person.

It’s my mom’s recipe and it’s very quick to prepare, in fact, it takes about 30 minutes to bring it to the table. First, cook the cauliflower with tomato sauce and a bit of onion, when it’s ready add the pasta and finish cooking with a generous grating of Grana Padano, Parmesan or Pecorino. A simple and genuine dish! Although I didn’t love it much when I was little, now I adore it.

For this recipe, I recommend using short pasta, like ditali, farfalline, or tubetti. Try it, I’m sure you’ll like it and the kids will love it too!

  • 9.2 oz pasta (ditali or short pasta)
  • 1/2 cauliflower (medium size)
  • 4 tbsps tomato sauce
  • 1/3 onion

Steps

Making Pasta with Cauliflower is very simple.

  • First, place a tall pot on the stove with 2 tablespoons of oil and the finely chopped onion. Sauté it for a moment, then add the tomato sauce and let it simmer over low heat for a few minutes.

  • Meanwhile, wash the cauliflower and cut the florets into moderately small pieces, add them to the pot with the tomato and season with salt and pepper.

  • Now add 3 glasses of water, cover with a lid and let it cook over gentle heat until the cauliflower is ready.

  • Once ready, add more salted water and bring to a boil; as soon as it boils, throw in the pasta and finish cooking. If you prefer it more soupy, in the form of soup, gradually add more hot water. We like it a bit drier.

  • Serve hot with a generous grating of Grana Padano.
