The peach and feta salad is a light, summery, healthy dish: it takes just a few minutes to prepare and is the perfect solution for lunch or dinner after a day at the beach or to take with you for lunch on the go. I prepared the peach and feta salad simply, but you can add black olives, spring onions, walnuts, beef slices, roast beef, bresaola, and a pinch of thyme for flavor.

Ingredients
- 7 oz feta in cubes
- 4 peaches
- 2 tbsps extra virgin olive oil
- to taste salt
- to taste arugula
- 2 tbsps onion tears from Valdelsa

Steps
Wash the arugula, dry it, and place it on the serving plate. Wash the peaches, slice them, and place them on the plate. Add the feta cubes, season with salt and oil. Finally, add the onion tears from Valdelsa and serve immediately.
Notes
If you don’t like feta, you can replace it with diced Parmigiano Reggiano.
