Preparation
I used whole wheat bread made from ancient grains.
Preferably, but not necessarily, from the day before.I used ricotta.
Drain it well to avoid making the bread too moist.Wash the cherry tomatoes, cut and remove the stem part if necessary, and halve them.
Wash and dry the basil leaves by gently patting them with paper towels.
Bruschetta, crostini, and crostoni, difference:
– Bruschetta, from toasted bread, is made with bread toasted on a grill or griddle;
– Crostoni is baked in the oven or toasted.Cut the bread into slices about an inch thick.
On a griddle – grill – with parchment paper.
Heat the griddle.
Toast the bread slices on both sides.In the oven
Line a baking tray with parchment paper and place the bread slices on top.Preheat the oven.
Toast in a ventilated oven at 356°F for a few minutes until desired golden color and crispness.Cool bruschetta, crostini, and crostoni on a cooling rack.
Season bruschetta, crostini, and crostoni with:

– cherry tomatoes;
finish with:
– a pinch of salt;
– a pinch of pepper;
– basil;
