Tips & Tricks
The Raschera is a mountain cheese typical of my area (the Cuneo area), very flavorful with a dense semi-hard texture. If you haven’t tried it, I highly recommend it, as it is very tasty and excellent as a table cheese, for fondues, and for gnocchi.
If you can’t find it, you can replace it with a cheese with similar characteristics, but not too aged, such as Fontina, Castelmagno, Toma Piemontese, Valtellina Casera, Provolone Valpadana, or Caciocavallo Silano…
