Steps to Prepare Spaghetti with Lupini Clams
Start at least 3-4 hours before by purging the clams. Place them in a bowl with cold water in which you dissolve a tablespoon of coarse salt. Leave them in the cool in this way, to make them release all the sand. Until ready to store them, keep them in the fridge in their net, wrapped in a damp cloth.
Rinse the clams and proceed with the recipe. Start by preparing garlic cut into pieces, removing the central core, and finely chopping parsley.
Put olive oil in a skillet, add the garlic, let it heat slightly, and add the clams. Let them go a bit, then add parsley and white wine. Let it go a bit more with the lid until all the clams open.
