Ingredients for the Savory Leek Pie
- 1 roll puff pastry (round)
- 2 leeks (or 3 if they are small)
- 1 glass milk (you can substitute with water)
- 1 onion (small or 1 shallot)
- 2 eggs
- 2 tablespoons Parmesan
- 200 ml béchamel sauce
- 3 tablespoons extra virgin olive oil
- to taste nutmeg
- to taste salt
- to taste pepper

Preparation
Making the Savory Leek Pie is very simple.
First, wash and slice the leeks into thin rings. Use the entire white part and part of the green, the more tender part.
Set aside the unused green tops. I cooked them and added them to the dough to make some excellent tagliatelle. I will show you how soon.
In a non-stick pan, heat the extra virgin olive oil, add the sliced leeks, and to taste, salt, black pepper, and nutmeg. Let it go for 1 – 2 minutes.
Add the milk (or water), cover with a lid and cook gently for about ten minutes. The milk should dry out.
Meanwhile, preheat the oven to 356°F.
Beat the eggs in a bowl and add the grated Parmesan and a little salt.
Unroll the puff pastry and leave it at room temperature for a few minutes
Place it with its parchment paper into a tart pan with a diameter of 11 inches, like for examplethis one.
Distribute the warm leeks inside the puff pastry along with the egg and Parmesan mixture and level.
Cover with the béchamel.
Bake in an already hot oven for about 35 – 40 minutes, until golden.
Remove from the oven, let the savory leek pie rest for a few minutes, then gently transfer it to a serving dish and serve.
