Ingredients for Pork Slices with Cherry Tomatoes
- 12 slices pork loin (small and slightly thinly sliced)
- as needed flour
- as needed extra virgin olive oil
- as needed salt
- as needed pepper
- 3.5 oz cherry tomatoes
- 1 small glass dry white wine (scant)
- 1 sprig chopped parsley

Preparation
Making Pork Slices with Cherry Tomatoes is very simple.
First of all, here are some tips on the meat.
I used the loin, which is the cut obtained from the muscle of the rib without the bones, also known as loin or back loin. It is a tasty cut, but with not too much fat, just enough to keep it tender.
Coat the pork slices in flour on both sides and remove the excess flour.
Place a pan with extra virgin olive oil on the heat and let it warm up. Add the slices and brown them well on all sides, then salt and pepper them.
At this point, take the cherry tomatoes, wash them, and cut them into quarters or halves and add them to the pan with the meat.
Add the white wine and let it evaporate, then cover with a lid and cook, on low heat, for about 8 – 9 minutes.
Then, remove the lid and let the sauce thicken. If it dries too much, add a scant ladle of water.
Finish with chopped parsley and serve.
