SICILIAN ALMOND PASTRIES

Sicilian almond pastries are delicious treats! Moreover, they are quite simple to make… the important thing that cannot be skipped is resting in the fridge. I highly recommend, if you try them at home, fridge rest is necessary!

A few years ago, I tried the ‘pizzicotti’, I’ll leave you the recipe, which is identical to this one, only one ingredient and the shape change.

Ingredients

  • 2 cups blanched almonds (or almond flour)
  • 1.25 cups sugar
  • 2 egg whites
  • 1 tsp almond flavor
  • 10 candied cherries
  • 10 almonds

Tools

  • 1 Food processor Bimby TM31 – TM5 – TM6
  • 1 Bowl
  • 1 Parchment paper
  • 1 Baking tray oven

Preparation of Almond Pastries

  • WITH THE BIMBY: Place the almonds, sugar, and lemon zest (optional) in the bowl. Blend at speed 10 for 15 seconds. Use the spatula to bring the mixture to the center. Then add the egg whites and almond flavor. Mix at speed 4 for 20 seconds.

  • The mixture should be soft and compact. Now slightly wet your hands with water and form balls slightly larger than a walnut, you will get about 20 balls, each weighing approximately 25 grams (0.88 oz) each.

  • BAKING: Take a tray, cover with parchment paper, and place the sweets on top. Put an almond or a candied cherry in the center. Once they are all ready, they need to rest in the fridge for at least 5 hours, or for an entire night. I left them overnight.

  • After the time has passed, transfer everything to a baking tray and bake in a preheated oven at 350°F with fan for about 15 minutes. They should lightly brown. Once cooled, the almond sweets will be ready to eat!

  • WITHOUT BIMBY: Place the almonds in a mixer (or blender) along with the sugar. Pulverize. Then add the egg whites and almond flavor. Work everything until you get a soft and compact dough.

    You can also use almond flour and powdered sugar, in this case, the mixer will not be necessary. Mix everything in a bowl until you get a soft and compact dough.

    Then proceed as described above for baking

NOTES

The almond sweets can be stored for a couple of days in a tin box.

They are a beautiful gift idea, maybe for Christmas, Easter, or to celebrate any occasion.
