Ingredients
- 2 cups type 1 flour
- 6.76 oz rice oil
- 1/4 cup water
- 1/2 cup brown sugar
- 1 teaspoon baking powder
- 1/2 lemon (grated zest)
- 1 cup almond milk
- 2 lemons (grated zest)
- 3 tbsps cornstarch
- 1/3 cup brown sugar
- 1 lemon
- pistachio granules
- powdered sugar

Steps
Combine the flour with the baking powder in a bowl.
Add the brown sugar and lemon zest.
Mix the liquids in a container with a whisk and add them to the dry ingredients, working with your hands.
Transfer the dough to a work surface and knead quickly.
Cover with plastic wrap and let rest for 30 minutes in the fridge.
Roll out the shortcrust pastry and line a 9-inch tart pan.Prick the bottom with a fork.
Bake at 350°F for 20 minutes in a preheated static oven.Sift the cornstarch into a pot to remove any lumps, alternatively mix well with a whisk.
Add the almond milk and blend. Add the grated lemon zest.
Place over heat and cook on low flame until the cream thickens, about 2 minutes from boiling. Remove from heat, transfer to a clean bowl.
Mix well and cover with a sheet of plastic wrap in contact. Let it cool at room temperature.
Remove the tart from the pan and place it on a serving plate. Pour the cream inside and level it with a spatula or the back of a spoon.
Wash the lemon and dry it well. Cut thin slices of 2-3 mm. Decorate with lemon slices and pistachio granules.
Transfer to the refrigerator for at least 2 hours before serving.
