Vegan Lemon Tart

The vegan lemon tart is a truly delicious and light dessert, perfect as a dessert at the end of a meal. A very simple dessert in preparation, a simple shortcrust pastry, and a lemon cream with a very delicate flavor. This dessert is perfect in all seasons.

Vegan Lemon Tart

Ingredients

  • 2 cups type 1 flour
  • 7 tbsp rice oil
  • 1/4 cup water
  • 1/2 cup brown sugar
  • 1 tsp baking powder
  • 1/2 lemon (grated zest)
  • 1 cup almond milk
  • 2 lemons (grated zest)
  • 3 tbsp cornstarch
  • 1/3 cup brown sugar
  • 1 lemon
  • chopped pistachios
  • powdered sugar

  • 1 Whisk
  • 1 Spatula

Steps

  • Combine the flour with the baking powder in a bowl.
    Add the brown sugar and the lemon zest.
    Mix the liquids in a container with a whisk and add them to the dry ingredients, work with your hands.
    Transfer the dough to a work surface and knead quickly.
    Cover with plastic wrap and let rest for 30 minutes in the fridge.
    Roll out the shortcrust and line a 9-inch tart pan.

    Prick the bottom with a fork.
    Bake at 350°F for 20 minutes in a preheated static oven.

  • Sift the cornstarch in a pot to eliminate any lumps, or mix well with a whisk.

    Add the almond milk and combine. Add the grated lemon zest.

    Place on the heat and cook on low until the cream has thickened, about 2 minutes after reaching a boil. Remove from heat, transfer to a clean bowl.

    Mix well and cover with a sheet of cling film. Let it cool at room temperature.

  • Remove the tart from the pan and place it on a serving plate. Pour the cream inside and level it with a spatula or the back of a spoon.

    Wash the lemon and dry it well. Cut thin slices of 1/8 inch. Decorate with lemon slices and chopped pistachios.

    Transfer to the refrigerator for at least 2 hours before serving.
