Choose from the blood oranges of Sicily: tarocco, sanguinella, valencia according to the season and personal taste.
Oranges fall into the second group for sugar content in fruit.
In case of hyperglycemia, prediabetes, and type 2 diabetes, it is necessary to consider the portion of fruit, in this case, oranges, and the entire meal in which it is included.

Ingredients
- fennel
- 1 orange (1/2 whole and 1/2 juiced)
- 1 drizzle extra virgin olive oil (raw)
- 1 pinch salt
- 1 pinch mixed peppercorns (with grinder)
- 12 black olives in brine (pitted)
- to taste parsley (chopped)
- 1 pinch red chili pepper (roughly chopped)

Preparation
Clean the fennel: remove the stalk and outer leaves if damaged, wash them thoroughly.
Cut each fennel into four wedges and slice each wedge into more or less thin slices according to taste.Wash the orange and cut it in half:
• half should be cut into wedges and each wedge should be cut in half;
• half should be juiced.Remember that juice is fiber-free, skip adding it if you deem appropriate.
Drain and rinse the olives.
Emulsify the orange juice with a drizzle of oil.
Season the fennel with salt and pepper and drizzle it with the emulsified orange juice and oil.
Add the orange and finish with the olives.
Sprinkle the chopped parsley and roughly chopped red chili pepper.
Drizzle with a drizzle of extra virgin olive oil.Plate it.
Your fennel, orange, and olive salad is ready.
