  • 1 Egg
  • to taste Pepper

Preparation of the bundle

  • Remove the woodiest parts of the asparagus and wash them, then boil them in plenty of salted water for just a few minutes. Drain and let them cool slightly.

  • Cut out rectangles of dough about 2/3 inches wide. Lay the folded slice of speck on itself, on each dough rectangle and place 2 or 3 asparagus in the center, roll up to form a bundle.

  • Press the puff pastry slightly to seal it and place them on a tray lined with parchment paper. Bake at 356°F for 15 minutes

  • Meanwhile, heat the cooking cream over low heat, add the grated Grana Padano. Melt the cheese while stirring continuously. As soon as it becomes a cream, remove from heat. Place the bundles on a plate and serve them with the cheese cream
