Magic coffee and cocoa cake gluten-free and lactose-free, a delicious version of the classic magic cake.
But why is it magic??
For those who do not know it, the beauty of this cake is that, with a single batter and a single baking, you create three different layers: at the base, the consistency of a pudding, in the middle a cream, and finally a sponge cake.
Genius, right? Shall we prepare it together?

Ingredients
- 4 eggs (at room temperature)
- 9 oz sugar
- 4.4 oz lactose-free butter
- 1.7 cups plant-based milk (almond or other of your choice)
- 0.4 cup coffee
- 3 oz gluten-free rice flour
- 0.7 oz gluten-free potato starch
- 1.1 oz gluten-free corn starch
- 1 pinch salt
- 0.5 oz unsweetened cocoa powder
Steps
Prepare all the ingredients, melt the butter (it’s fine in the microwave), mix the flours with the cocoa and the pinch of salt, slightly heat the milk and combine it with the coffee.
Separate the eggs and beat the egg whites with half of the sugar. Set aside.
Now beat the yolks with the remaining sugar, when they are light and fluffy, still beating, add the butter and then the flours.
Add the milk with the coffee, pour gradually while working with the whisks, when well combined you will have a rather liquid mixture, it’s time for the egg whites.
Add a couple of heaping tablespoons of egg whites into the liquid mixture and stir vigorously, then gently fold in the remaining egg whites, being careful not to deflate them too much.
Line a rectangular pan with high edges with parchment paper, mine is 8 x 10 inches, a trick for lining rectangular pans 👉 I wet the parchment paper, squeeze it, and spread it on a towel to remove excess water, then line the pan effortlessly.
Bake at 300°F for 80 minutes.
At the end of cooking, let cool at room temperature and then in the fridge for an hour.
Once cool, remove the cake, cut the edges to make it more regular and reveal the layers, then cut into squares. Dust with powdered sugar as desired.
