Curiosities
When freshly baked, pot-baked bread emits strange sounds and crackles. It’s the final baking phase that occurs outside the oven: the exterior is dry, but the interior is still moist. As it cools, the crust contracts and cracks, steam escapes through the crevices, and you hear the sound. It’s exciting to hear the bread sing. Every time I make pot-baked bread, after taking it out of the oven, I sit and wait. I wait for it to sing and listen. Please, never cut hot freshly baked bread, or you’ll stop the baking phase outside the oven!
