PREPARATION OF THE OMELETTE WITH VARTI’S (wild hops)

  • Clean the herbs, wash them several times in plenty of water, then boil them in salted water for about 15 minutes, let them cool, then squeeze them slightly with your hands and chop them not too finely.

  • Break the eggs into a bowl, beat them lightly, add the Parmesan, a pinch of salt and pepper, beat again lightly and add the chopped herbs.
