  • Wash the zucchinis well and remove the ends. Cut them lengthwise into thin slices (about 1/4 inch). You can use a mandoline for even slices.

  • Heat a cast iron grill over high heat. Brush the zucchini slices with some extra virgin olive oil and place them on the hot grill. Grill the zucchinis for about 3-4 minutes per side, without turning them too frequently to avoid ruining the grill marks. Once ready, put them in a container.

  • In a bowl, combine olive oil, salt, pepper, chopped garlic, a few drops of vinegar, and fresh mint leaves. Mix well.

  • Pour the marinade over the grilled zucchinis and mix gently. Let them rest for at least 30 minutes in the refrigerator so that the zucchinis absorb all the flavors.
