In Sicilian land, and precisely in my Palermo, I have always been fortunate to savor unique and tasty dishes. It would take an entire week, or perhaps a month, to compile a detailed list of all the delicacies typical of my land, but today I focus on a very soft and delicious preparation, I’m talking about pizza by the slice. An alternative to the classic pizza made with brioche dough, a very versatile dough with which many baked or fried recipes can be made. Pizza by the slice is perfect for any occasion and at any time of the day, especially during the festive eves of the Immaculate Conception, Christmas, or New Year’s Eve, where in Palermo, it almost seems mandatory to eat it. You can top it with the ingredients you prefer, and it will always turn out to be something delicious to enjoy and will hardly disappoint you.

Ingredients
- 4 cups all-purpose flour
- 1 cup water
- 0.88 oz fresh yeast
- 1.76 oz lard
- 1.76 oz sugar
- 0.35 oz salt
- 3.5 oz fresh champignon mushrooms
- 8 pieces artichokes, frozen
- 4 hot dogs
- 1 pack pizza mozzarella
- 1.27 cups tomato sauce
- 2 slices cooked ham
- to taste oregano
Steps
In a stand mixer or a Thermomix, put flour, water, yeast, sugar, and lard
Knead for 4 min, if using a Thermomix, set it to dough mode
At the third minute, also add the salt and wait for the process to finish
Transfer the dough onto a floured work surface and shape it into a ball
Leave the ball on the surface and cover it with a cloth for about 20 min
After the rest time, roll the ball out with a rolling pin
Take a baking sheet or tray and grease it with some oil
Transfer the rolled-out dough onto the tray, covering the entire surface using your fingertips
Let it rise for 90 min by placing the tray with the dough inside the oven turned off but with the light on
Heat a non-stick pan and cook the mushrooms over medium heat to eliminate moisture that would otherwise release liquid onto the pizza
Cook the artichoke pieces in the same way
Cut the hot dogs into slices
Chop the mozzarella with a food processor
Pour the tomato sauce into a bowl and season it with salt and oil
After the 90 min rising time, remove the tray from the oven and preheat it to 428°F
Cover the dough with the tomato sauce and sprinkle grated mozzarella over the entire surface
Proceed by topping with ham slices, mushrooms, hot dogs, and artichokes
Bake at 428°F for 8 minutes by placing the tray on the bottom of the oven and then for another 8 minutes at medium height
Remove the pizza from the oven and serve in slices, drizzle with oil and sprinkle with oregano if desired

You can keep leftover pizza in the fridge for 2 days and reheat it before consuming.
