They originate from Swedish cuisine where they were first prepared in the 1950s.
They are characterized by a unique combination of textures and flavors.
Whole potatoes are sliced at regular intervals, creating a series of thin slices that, while remaining attached at the base, slightly open during cooking, resembling the folds of an accordion. This method allows for even cooking that ensures dual texture: a golden, crispy crust forms on the outside, while the inside remains soft and tender.
Enriched with slices of pork neck or bacon, they become a symphony of flavors.
They are loved by both adults and children and are ideal to serve as a side dish or even as appetizers.
They can be cooked either in an air fryer or a conventional oven.

Ingredients for Accordion Potatoes
- 3 potatoes
- 9 slices pork neck
- to taste fine salt
- to taste extra virgin olive oil
- 2 sprigs thyme

Steps for Preparing Accordion Potatoes
Choose potatoes of similar size so they cook evenly. It is preferable to use yellow-fleshed potatoes, which have the ideal texture to remain compact during cooking and absorb seasonings well.
Wash them thoroughly under running water to remove any soil residue, as the skin will be left for added crispiness. Bring a pot with plenty of salted water to a boil and cook for about 20 minutes; the time varies depending on the size of the potatoes. Test with a skewer: they should be al dente. Drain and let them cool completely.
Place a potato on the cutting board. If you’re inexperienced in slicing them, place a chopstick or wooden spoon handle alongside to avoid cutting it completely. Start making thin incisions (about 1/8-1/4 inch apart) along the potato, cutting down until you reach the sticks, which will prevent you from cutting all the way through. The slices should remain attached at the base. Repeat for all potatoes.
Line a baking tray or the air fryer basket with parchment paper and season each slice with extra virgin olive oil, fine salt, and a few thyme leaves.
Bake at 464°F for 10 minutes in the air fryer, or at 392°F for 15-20 minutes in a static oven, or until golden brown. Each oven has its own settings, so check that they are well-cooked.
Once cooking is finished, place them on a serving plate and stuff each potato with 3 slices of pork neck. If you want extra crispiness, you can bake for another 5 minutes at 392°F so the pork neck becomes crispy, or serve raw and…

Tips and Storage
Accordion potatoes, once cooked, can be stored in the refrigerator for 2-3 days, sealed in an airtight container or wrapped in plastic wrap. Before storing, let them cool completely at room temperature.
To reheat, place them in a preheated static oven at 356°F for 10-15 minutes, or until they become crispy again.
