  • 1 cup flour
  • 1 egg
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup water
  • to taste fine salt
  • 1 spray extra virgin olive oil
  • 2 fennel bulbs

Steps for Preparing Fennel in Batter

Start by washing the fennel under water and remove the damaged outer leaves.

Then cut the fennel in half and slice it not too thin, see the video and set aside.

Meanwhile, in a bowl, prepare the batter

Break an egg and with the hand whisk whisk with the salt until you have a frothy mixture.

Add the sifted flour little by little, always whisking, and the water until you get a smooth, lump-free mixture.

Finally, add the grated Parmesan cheese, which will give the dish an extra flavor boost.

Line the air fryer basket with a sheet of parchment paper and place the fennel in batter, spacing them apart, and season with a spray of extra virgin olive oil. Cook at 392°F for 15 minutes or until golden.

Storage and Tips

Fennel in batter is best just out of the air fryer when the batter is still crispy and the fennel retains its internal softness. If possible, consume them right after cooking to best savor the crunchiness and lightness.

You can store them in an airtight container in the refrigerator for about 1-2 days. However, keep in mind that the batter will tend to lose its crispiness over time and may become softer due to moisture.

To make them crispy again, reheat them in the air fryer for a few minutes at about 356°F. This way, the batter will dry and become crispy again without needing to add oil.

Do not freeze.

You can add fresh herbs such as parsley, thyme, or oregano to the batter to enhance the flavor of the fennel. You can also experiment with spices like black pepper, paprika, or turmeric for an exotic touch.
