Sweet ravioli with apricot jam, the simple and delicious treat. The recipe I want to share with you today is about special shortcrust pastry treats with a filling of apricot jam or your preferred flavor. My shortcrust pastry is soft and very easy to prepare even in advance. And if you want more indulgent treats, you can use the same recipe by replacing the jam with hazelnut cream. Ingredients for the Jam Tarts

  • 1 egg
  • 1 egg yolk
  • 1/2 cup cup sugar
  • 5 1/2 tbsp tbsp butter
  • 2 1/4 cups cups flour
  • 1 tsp baking powder
  • 1/2 lemon zest (untreated)
  • 3/4 cup cup apricot jam
  • to taste powdered sugar

How to prepare Sweet Ravioli with Jam

  • You can prepare the shortcrust pastry by hand or with a mixer. Mix the butter in small pieces with the flour. Add the whole egg and one yolk, the sugar, baking powder, and the grated zest of half an untreated lemon. Knead quickly until the dough is soft but not sticky. Form a ball, wrap it in plastic wrap, and let it rest in the fridge for at least 30 minutes.

  • Roll out the shortcrust pastry on a floured work surface. Cut out discs with a diameter of 3 1/4 inches. Place a generous teaspoon of apricot jam in the center. Fold into a half-moon and seal all around with the tines of a fork.

  • Prepare them all the same way until the dough is used up. As you prepare them, place them slightly spaced apart on a baking tray lined with parchment paper. Let them bake in a preheated oven at 356°F in static mode for 18-20 minutes. Let them cool and sprinkle with powdered sugar as desired.
