- 125 g butter
- 300 g Abate pears (weighed after cleaning)
- 250 g all-purpose flour
- 150 g cow ricotta
- 125 g sugar
- 80 g pecans (for the batter)

- 20 g pecans (to put on top)
- 10 g unsweetened cocoa powder

Pear and Pecan Brownies Preparation
Start by melting the butter in a small saucepan and let it cool.
In a bowl, beat the eggs with the sugar using a spoon, add the (now cooled) butter slowly while continuing to mix until you get a smooth mixture.
Now add the water and ricotta, beat with a spoon until you get a smooth mixture.
In a separate bowl, sift flour, cocoa, and baking powder, then add them to the liquid mixture and mix from bottom to top until you get a dense and lump-free mixture (after baking it will be very moist, I assure you).
Peel the pears and cut them into cubes, coarsely chop 80 g of pecans and add pears and pecans to the batter, mix until combined.
Line the baking pan with parchment paper, use a spatula to pour in the mixture and level it until uniform, place the remaining pecans on top and sprinkle with granulated sugar.
Preheat the oven to 428°F (220°C) and when it is hot, bake the cake for 40 minutes. (Toward the end of the cooking time, always do the toothpick test because ovens are not all the same), once cooked, remove from oven and let completely cool.
Once the cake is cold, cut the pear and pecan brownies into regular squares and serve! Enjoy this delicious treat!
