The important thing when preparing this recipe is that you must use gloves, otherwise, you will stain your hands and they will be difficult to clean. I have to say that this jam has always been my favorite, it is unique, and if you go to buy it, it is very expensive, so if you have the opportunity to gather walnuts, I recommend making it. It’s an elaborate process, but it’s worth it.

Ingredients for the walnut jam:
- 1.1 lbs walnuts (Weighed cleaned)
- 1 1/3 cups sugar
- 1 lemon
- 1 1/2 cups water

First, we need to clean the green walnuts by removing all the green parts, leaving only the white part, then we put them in cold water.
Squeeze one lemon, then cover and leave them for about 12 hours, changing the water 2/3 times. After about 12 hours, blanch them, changing the water again 2/3 times.
In a saucepan, put the water (1 1/2 cups), sugar, drained walnuts, and cook for about 30 minutes, stirring occasionally.
Once ready, put it immediately into sterilized jars, close them, and turn them upside down to create a vacuum seal. If you want to keep it longer, boil the jars again for about 20 minutes.
