Zucchini, Potatoes, and Peppers Flatbread, here is a nice summer recipe (but not only 😉) with zucchini, paired with potatoes and peppers.

It looks like a focaccia, but it’s not. The dough is actually made only with flour, water, oil, and grated cheese.

This recipe is a real ace: perfect as a tasty appetizer, a light second course, or an original side dish that everyone will agree on. Great for a buffet on an evening with friends, as a main dish, or to take to the beach or for a picnic. In short, to enjoy on any occasion!

Ingredients for the Zucchini, Potatoes, and Peppers Flatbread

  • 7 oz zucchini
  • 3.5 oz potatoes
  • 1.5 cups flour
  • 3.5 oz red peppers
  • 1.5 cups water
  • 2 tbsps olive oil
  • 1.5 oz Grana Padano DOP
  • to taste salt
  • to taste white pepper
  • to taste extra virgin olive oil

  • 2 Bowls
  • 1 Baking tray

Preparation of the Zucchini, Potatoes, and Peppers Flatbread

  • Preheat the oven to 350°F, in fan mode.

  • Take the potatoes, peel them, and cut them into thin slices. Wash and trim the zucchini, slice them thinly. Do the same with the pepper.

  • In a bowl, pour the flour, salt, and pepper to taste. Add water, oil, and mix well with a fork until you get a smooth batter without lumps.

  • Add the grated Parmesan and finally the sliced potatoes and zucchini. Mix well.

  • Pour the mixture into a baking tray lined with parchment paper, level the surface using a spatula

  • and drizzle with a bit of extra virgin olive oil.

  • Bake the flatbread in the preheated oven and cook for 40-45 minutes. It took me 45 minutes to get a nice golden surface.

  • Remove the zucchini, potatoes, and peppers flatbread from the oven, cut it into squares, and serve hot.
