The green pie is a typical recipe from my region, Liguria. Famous and much appreciated.
The classic version is made with a pastry called ‘pasta matta,’ while this version is suitable for those who have little time in the kitchen but don’t want to give up the taste of this delicacy.
Here the pastry is replaced by breadcrumbs, which gives the filling compactness and a crunchy note.
With a filling based on zucchini, rice, eggs, and grated Parmesan cheese. All simple and poor ingredients but together they are truly delicious.
Easy and quick, it is a great dinner saver and can be taken on a trip as it is excellent even at room temperature. Indeed it is extremely versatile.
Ideal to be cut into small pieces and served as an appetizer.
Accompanied by a salad, it makes a complete and nutritious meal.

Ingredients for the Quick Green Pie
- 2.2 lbs zucchini
- 1/2 cup Carnaroli rice
- 1/2 yellow onion
- 3/4 cup grated Parmesan cheese
- 2 eggs
- to taste fine salt
- to taste breadcrumbs
- to taste extra virgin olive oil
- 1 splash white wine

Steps for Preparing the Quick Green Pie

To prepare the delicious green tart, start by washing the zucchini thoroughly and peeling the onion.
Then, with a vegetable grater grate them in a bowl the zucchini and onion. Meanwhile, grease a pan and sauté the onion, add the rice and toast it for 1 minute and drizzle with a splash of white wine. Let it absorb, turn off the heat, and let it cool.
Add to the grated vegetables, the sautéed onion with rice, eggs, grated Parmesan, and salt.
Mix everything well with a fork and combine.
Line a baking pan with parchment paper and cover with a layer of breadcrumbs.
Pour the mixture, level it, and cover with more breadcrumbs, and season with extra virgin olive oil, see video. Bake at 350°F for 40 minutes or until golden brown.

Advice and Storage
Use fresh zucchini and, if possible, buy them at local farmers’ markets; they will be more genuine and tastier.
Store the green tart in the fridge for two days wrapped in plastic wrap or in an airtight container.
If you want to store it longer, you can put it in the refrigerator. Wrap it well to prevent it from absorbing odors and flavors from other foods. It can last up to a week in the refrigerator.
