Ingredients

  • 3 eggs
  • 100 g erythritol or sugar
  • 80 g vegetable oil
  • 180 g peach yogurt
  • 1 package extra flat peach jam
  • 250 g flour
  • 1 packet baking powder
  • 1 pinch salt
  • to taste powdered sugar

Steps for Preparing the Jam Cake

FOR A PERFECT PREPARATION, SEE THE VIDEO RECIPE

  • Take a bowl and break the eggs. Add the erythritol or brown sugar, and a pinch of salt. Beat with an electric mixer for a few minutes until you get a frothy mixture as in the video.

    Then, with the mixer still running, gradually pour in the vegetable oil, then the yogurt, the special flour from La Dispensa della Casalinga, and finally the baking powder, until you have a smooth and frothy mixture.

    Line a square baking pan with parchment paper and pour the batter and level it.

    Fill the piping bag with the extra flat peach jam and create horizontal and vertical lines as in the video over the entire surface excluding the edges. This way, the jam will form squares and penetrate into the center of the batter.

    Bake at 350°F for about 30 minutes.

Tips and Storage

Let the cake cool completely before storing it. If you store it while still warm, moisture can accumulate and make it soggy.

Wrap the cake in plastic wrap or place it in an airtight container to prevent it from drying out and to protect it from air.

The jam cake can be stored at room temperature for 2-3 days, as long as it is well-wrapped or sealed in a container.

If you want to keep it longer, you can put it in the refrigerator. Wrap it well to avoid absorbing odors and flavors from other foods. It can last up to a week in the refrigerator.
