And when the day isn’t going right or I feel like pampering myself, I close myself in my kitchen and amidst flour, eggs, and sugar, the sun returns. One of the perfect desserts for these occasions is surely the Apple and Raisin Cake. An internally moist cake, fragrant like no other, and so very good. My Apple Cake smells of cinnamon, is butter-free, and with a jar of yogurt that makes it soft and extremely fluffy. Ingredients for the Apple Cake
- 2 eggs
- 110 g sugar
- 600 g apples
- 60 g raisins
- 120 g flour
- 60 g potato starch
- 1 jar plain yogurt (125 grams)
- 3.4 oz vegetable oil
- 1/2 packet baking powder (8 grams)
- 1 tsp ground cinnamon
- to taste powdered sugar (for decoration)
How to Prepare the Soft Apple Cake
Peel the apples, clean them, and cut them into thin slices. To prevent them from darkening, I suggest covering the plate with a napkin. Soften the raisins in a bowl with warm water.
Whisk the 2 whole eggs with the sugar using an electric mixer for 6-7 minutes until you have a light and frothy mixture.
Add a jar of plain yogurt and the vegetable oil. Mix.
Continue the preparation by adding the sifted flour, potato starch, and baking powder. Mix.
Add half of the apple slices, the drained raisins, and the cinnamon. Mix with a spatula to incorporate them into the batter.
Pour the batter into a 20 cm (8-inch) diameter baking pan, greased or lined with parchment paper. Arrange the apple slices concentrically on the surface, letting them sink slightly into the batter.
Let the Apple and Raisin Cake bake in a preheated static oven at 350°F for 35-40 minutes. Always perform the toothpick test to check the cake’s internal doneness.
Let it cool before removing it from the pan and decorate as desired with some powdered sugar
