Ingredients for Preparing Zucchini Parmigiana

  • 4 potatoes
  • 2 slices cooked ham
  • 1.8 oz mozzarella for pizza
  • 1/2 mozzarella
  • to taste rosemary
  • to taste fine salt
  • to taste extra virgin olive oil
  • 1 cup milk

  • Choose medium-large potatoes. Peel them and slice them thinly with a mandoline. Dry them with a paper towel.

    Grease a 24 cm skillet and heat. Then, arrange the potato slices in a circle to cover the entire surface and salt.

    Fill with cooked ham and julienne mozzarella.

    Cover with another layer of potatoes, salt, and cook with a lid on low heat for 10 minutes.

    After the time, pour a cup of milk and continue cooking on medium-low heat for another 10 minutes.

    After the minutes, garnish with half a mozzarella and some rosemary leaves.

    Cook again for another 5 minutes with the lid on, until the mozzarella has melted.

    Let it rest for 3 minutes and serve hot for a cheesy and tasty heart.

Tips and Storage

It is important to slice them thinly and evenly to ensure even cooking.

Drain the mozzarella well before using it to prevent it from releasing too much water during cooking. You can slice it or cube it.

Choose fresh potatoes and if you can, buy them at KM 0 markets.

Store in the fridge in an airtight container or well-sealed with cling film for two days.

You can serve at room temperature or if you heat it up, add a little milk.
