  • 2 cups type 1 or 00 flour
  • 1/2 cup water
  • 2 tbsp extra virgin olive oil
  • to taste fine salt
  • to taste extra virgin olive oil
  • to taste oregano

Steps for Making Flatbreads

To prepare the crunchy and delicious flatbreads, pour the flour, water, and salt into a bowl. Mix coarsely with a wooden spoon and then pour onto a pastry board and knead by hand until you get a homogeneous dough. Work the dough until it is smooth and no longer sticks to your hands. This helps develop the gluten and give the flatbreads structure.

Let rest for about fifteen minutes in the overturned bowl.

Then flour and divide into 8 equal pieces and roll each into long thin strips with the rolling pin. Try to roll the dough evenly to ensure perfect baking.

Lay them on a baking tray lined with parchment paper and brush with EVO oil and sprinkle with oregano.

Bake at 220 degrees Celsius (428°F) for about 8 to 10 minutes, paying attention to baking in the last few minutes. They cook quickly, so be careful not to burn them.

Tips and Notes

Use good quality flour. I recommend using type 1 flour as it is less refined than 00, but if you don’t have it on hand, 00 is fine too.

Fresh aromatic herbs, such as rosemary, oregano, or thyme, enhance the flavor. Try them finely chopped to distribute them better.

Store flatbreads in an airtight container to maintain freshness and crunchiness. If they soften, you can briefly reheat them in the oven to restore their crunchiness.
