Cut the green beans into small pieces on a cutting board with a knife.
Mash the boiled potatoes with a potato masher. Make sure to mash the potatoes well to avoid lumps in the dough and place them in a bowl along with the green beans. Add eggs, grated cheese, salt, ricotta, fresh marjoram, and nutmeg
Mix the ingredients and spread on a baking dish lined with parchment paper.
Spread evenly and sprinkle with plenty of breadcrumbs.
Spray the surface with extra virgin olive oil and bake at 392°F for about 30 minutes in a static oven, while in air fryer mode at 356°F for about 14 minutes and at 392°F for the last 2 minutes or until golden.
Once cooked, remove from the oven and let cool to room temperature and serve…

Use fresh and seasonal vegetables for the best possible flavor
Serve the meatloaf with a sauce like vegan mayonnaise
Refrigerator Storage: Leftover meatloaf can be stored in the refrigerator for 2-3 days. Make sure to cover it well to keep it fresh.
Reheating: To reheat the meatloaf, you can use the oven or microwave. If using the oven, cover it with aluminum foil to prevent it from drying out too much.
