HOW TO PREPARE OVEN-BAKED GRATIN POTATOES WITH MELTY CHEESE
First, peel the potatoes (1). Wash them under running water, dry them with a cloth, and with a sharp knife cut them into thin slices (2). Blanch them in boiling water for a few minutes (about 5 minutes). Drain and let them cool (3).
Meanwhile, preheat the oven to 375°F.
Grease a baking dish (4) with extra virgin olive oil (olive oil is also fine). Arrange the potato slices in the baking dish (5), season with salt, drizzle with oil, and add 1/3 of the cubed cheese (6) and the grated Parmigiano.
Cover with another layer of potatoes and continue until the cheese is used up. I made 3 layers in total.
Drizzle with a thread of extra virgin olive oil; put them in the preheated oven and let them gratinate for about 10 minutes, or until the cheese is melted and the surface is golden brown. Remove from the oven and serve hot.
