Savory pie with potatoes and bacon, a quick and tasty idea with puff pastry, which can obviously also be replaced with olive oil dough, quick to make at home, or with a leavened dough, such as a simple pizza base or focaccia. I must admit that I am not a fan of ready-made puff pastry, but every now and then, rarely, I buy it. Usually it ends up expiring and it’s still there, so I rush to use it. The best way to make it disappear quickly is to prepare a savory pie, so it becomes a quick dinner saver and nothing goes to waste, in fact in the savory pie we can put everything that is about to expire in the fridge. This time I had eggs and stracchino to use, I also had smoked bacon, the kind already cut into cubes, which was also close to expiration, so giving up a quick carbonara, I thought of preparing a savory pie for dinner with these ingredients and adding some potatoes that, as always, go well with everything. So I leave you the recipe and suggest you try it, really excellent!!!

Ingredients for savory pie with potatoes and smoked bacon
- 1 roll puff pastry
- 5 medium potatoes
- 3.5 oz stracchino cheese
- 5.3 oz smoked bacon
- 2 medium eggs
- to taste salt
- to taste pepper
- to taste oregano
- to taste cherry tomatoes
- to taste black sesame seeds

Preparation steps for Savory Pie with Potatoes and Smoked Bacon
First, cook the potatoes. I cooked them in the microwave.
Cook in the microwave for 5 minutes at maximum power, wrapped individually in plastic wrap with the skin on, washed and dried, or on a dish, wrapping the whole dish in plastic wrap. Alternatively, in a microwave-safe container with a lid for about 10 minutes at maximum power.
You can also boil the potatoes in water on the stove for 35-40 minutes from boiling, or peel and cut them into chunks and cook them in a covered pan with a little oil.
Peel the potatoes while still warm.
In a bowl, mix 2 eggs with the stracchino cheese using a fork. Add the potatoes cut into chunks, season with salt and pepper, and mix.
Line a pan with the puff pastry placed on a sheet of parchment paper, the same in which the pastry is wrapped. Use a fork to prick the entire base.
Pour the mixture into the pan over the puff pastry: eggs, potatoes, and stracchino. Level the mixture over the entire surface, and fold the excess pastry over the filling. Use a kitchen brush or towel to apply some beaten egg on the folded pastry; use the egg left in the bowl, no need for more. Decorate with black sesame seeds all around the edge.
Add the bacon, oregano, a few halved cherry tomatoes, and bake in a preheated static oven at 350°F for about 30 minutes. Take out and enjoy; it’s excellent slightly warm, with a nice crunchy base and an incredible filling. Microwaved potatoes come out delicious, and the smoked bacon will do the rest.
