Ingredients for Oven-baked Chicken and Zucchini Skewers
- 6 slices chicken breast (12.35 oz in total)
- 1 cup zucchini (2 small or 1 large)
- 4.6 oz cooked ham (in slices)
- 1 cup breadcrumbs
- 3 tablespoons extra virgin olive oil
- 1 tablespoon rosemary (dried or fresh)
- 1 to taste fine salt

Preparation of Chicken and Zucchini Skewers
Place 3 slices of chicken side by side, lightly salt them, place half of the cooked ham on top, and roll from the long side forming a log. Do the same with the remaining chicken breast and cooked ham. Set aside the 2 chicken logs.
Clean the zucchini, wash them, and cut them into 9 thick slices. Set aside.
Cut each chicken log into 3 equal parts.
Take the 3 skewers and compose each one as follows: first insert 1 slice of zucchini, then 1 piece of chicken roll, another slice of zucchini, then 1 piece of chicken, and finish with 1 slice of zucchini.
Using a silicone brush, lightly brush the skewers with oil, then press them firmly into the breadcrumbs (mixed with rosemary and a pinch of salt) so they are evenly coated.
Place the breaded skewers on a baking tray lined with parchment paper, drizzle the remaining oil on top, preheat the oven to 428°F, and once it reaches temperature, bake and cook for 35 minutes. Serve hot and enjoy!
BONUS TIP
To prevent the wooden skewers from burning during cooking, soak them in water for 10 minutes before using!
