Sweet Ricotta and Raisin Swirls ๐ without Yeast
A dessert made with a thin and very elastic dough without yeast then filled with a ricotta cream and rolled into a swirl! A very simple recipe to prepare and very nutritious, great to serve as breakfast, snack, or anytime you crave it!

Ingredients for Sweet Ricotta and Raisin Swirls ๐ without Yeast:
- 7 1/2 cups flour
- 2 cups water
- 1 tablespoon vinegar
- 2 tablespoons vegetable oil
- 1/2 tablespoon coarse salt
- 21 oz ricotta
- 1 cup sugar
- 3 eggs
- 3/4 cup raisins
- 3/4 cup semolina
- 3/4 cup sour cream
- lemon flavoring
- lemon zest
- orange flavoring
- vanilla
Steps

Dough preparation:
In a bowl, put water, vinegar, oil, salt, gradually add the flour, and mix.
Knead until you get a homogeneous mixture. Let it rest covered for a few minutes, then divide it into 12 equal pieces and form balls.
Cover them and let them rest for about 30 minutes. After resting, take one ball at a time and roll it out. Take a plate with a little oil and place it inside, adding more oil on top
Continue with all the balls, stacking them while thoroughly oiling each one. Finally, cover them again and let them rest for another 30 minutes.
Cream preparation:
In a bowl, place well-drained ricotta, a bit of lemon zest,
Add sugar, flavorings, and mix. Add the sour cream,
Add the raisins, eggs, and mix. Finally, add the semolina.
Assembly:
Take one piece of dough at a time and gently stretch it, being careful not to tear it.
Put some filling inside, spread it, then roll it up to form a swirl. Proceed the same way with all of them. Place the obtained swirls on a baking sheet lined with parchment paper, leaving some space between them.
Brush them with a mixture of milk and egg yolk on top. Bake at 356ยฐF for about 40 minutes.
