Pasta with Fava Bean Purée

A truly Sicilian recipe with a deeply enveloping and winter taste. Despite this, no one is prohibited from preparing it even in intermediate seasons such as autumn and spring.

The pasta with fava bean purée is a very simple recipe to make but at the same time offers those who eat it a formidable experience, especially if they haven’t tried it before. In Sicily, it is very popular among families and is made frequently on various occasions.

As I mentioned, it is really a piece of cake to make because very few ingredients are needed and not much time to complete this culinary delight. You just need to get some dried fava beans, an onion, and a few other secondary ingredients like oil, salt, and pepper. In my version, I wanted to give it a bit more character by using turmeric which, in moderate doses, makes a difference.

The preparation will seem smooth and easy to follow, starting right from the cooking of the beans, but I don’t want to spoil the rest since you will find all the details of the steps in this recipe.

Ingredients

For pasta with fava bean purée

  • 1 onion
  • to taste extra virgin olive oil
  • to taste turmeric
  • 1 package dried fava beans
  • 4.2 cups water
  • to taste salt
  • 7.1 oz pasta
  • to taste pepper
  • to taste chives

Steps

To make pasta with fava bean purée

  • First, chop an onion by hand or with the help of a chopper

  • Next, heat a drizzle of extra virgin olive oil in a large enough saucepan and then sauté the onion, taking care not to burn it

  • Continue by adding a bit of turmeric and stir everything until the onion is well softened and colored

  • At this point, add the dried fava beans into the saucepan and mix everything until the beans are well coated

  • In this step, pour in the water and add the salt, stir and cover with a lid, allowing it to cook over medium heat for about 30 minutes

  • Once the time has passed, remove the lid and set aside 2 or 3 tablespoons of the mixture to use as a garnish

  • Proceed by taking a beaker and pouring all the cooked mixture inside, then blend it with an immersion blender until the mixture is smooth and homogeneous

  • Meanwhile, bring some water to a boil in a pot and cook the pasta for the time needed as indicated on the package

  • Finally, drain the pasta and add it to the fava bean purée. Proceed by mixing well to combine everything and plate

  • To complete, garnish the pasta dishes with a few tablespoons of the mixture set aside and a sprinkle of pepper and chives

Tip!

If you wish, you can also add some vegetable stock to the broth for a more intense and rounded flavor. Once plated, do not wait long before consuming it as the fava bean purée tends to solidify when it cools.
