Steps for preparing tiramisu
To prepare the delicious tiramisu, we start by making the coffee and allowing it to cool completely.
Then in two separate bowls, break the eggs into whites and yolks: The eggs must be absolutely fresh. Add a pinch of salt to the egg whites and whip them until stiff with an electric whisk until you get a firm and compact mixture. Add the sugar to the yolks and whisk them also until you have a light and frothy mixture.
Then add the mascarpone to the yolks and mix, with a spatula, until you get a smooth and homogeneous cream. Make sure the mascarpone is at room temperature to facilitate mixing.
Gently incorporate the whipped egg whites into the mascarpone and yolk cream, mixing with upward movements using a spatula to maintain the soft consistency. Be sure to mix delicately to avoid deflating the egg whites.
Pour the coffee into a wide bowl and dip the ladyfingers quickly into the coffee, one at a time, being careful not to soak them too much. Arrange them on a serving plate or in a rectangular pan, and form the first layer.
Cover the biscuits with a generous layer of cream, leveling it with a spatula or spoon, and repeat the process, alternating layers of coffee-soaked biscuits and cream until the ingredients are used up. Make sure to finish with a layer of cream.
Cover the pan or serving plate with cling film and place in the refrigerator for at least 4 hours, preferably overnight, so that the tiramisu sets and the flavors blend.
Before serving, generously dust the surface of the tiramisu with cocoa powder using a sieve.
Cut the tiramisu into slices and serve it cold. You can accompany it with a cup of coffee to further enhance the flavors.
