- 1 bunch Swiss chard
- 2 eggs
- 1 1/4 cups breadcrumbs
- 1/2 cup grated Parmesan cheese
- to taste fine salt
- to taste extra virgin olive oil

Steps for preparing crispy oven-baked chard
Let’s start by thoroughly cleaning the chard under running water to remove any dirt or impurities.
After washing the chard, take a sharp knife and cut away the leaves. In the heart of the bunch, the stems are more tender, so I cut them into clusters, leaving some leaves.
If the stems are particularly large and tough, you can briefly blanch them in slightly salted boiling water to make them softer and easier to eat. Otherwise, if they are tender, you can cook them directly in the oven, as I did.
Prepare the dressing for the baked chard, by beating the eggs with a little salt in a bowl and mixing the breadcrumbs with the grated cheese in another bowl. This combination will give the dish delicious crunchiness and rich flavor.
Then bread the chard stems first in the beaten egg and then in the mix of breadcrumbs and grated cheese.
Once breaded, line a tray with parchment paper and arrange them on it, spaced apart.
Preheat the oven to 356°F ensuring it is hot before putting in the baked chard.
Brush the stems with a light drizzle of olive oil, to help the coating adhere better and promote browning during baking.
Finally, add a light sprinkle of salt to season everything.
Bake the baked chard in the preheated oven and cook for about 20 to 30 minutes, or until the chard becomes tender and the topping is golden and crispy.
After cooking, let them cool slightly and serve. You will be amazed by their crunchiness and incredible taste.

Tips and Notes
You can enhance the flavor of the chard by adding fresh chopped herbs such as parsley, thyme, or basil, to the breadcrumbs and grated cheese seasoning.
If you prefer a lighter version, you can replace the breadcrumbs with corn or crushed oats.
Make sure to check the cooking during the last minutes to avoid the topping from burning
Baked chard can be stored in the fridge for two, maximum three days. Before serving, it is recommended to reheat in the oven at 320°F for a few minutes.
