Ingredients for Ricotta Fritters

  • 1 egg
  • 2/3 cup sugar
  • 1 orange (untreated)
  • 3/4 cup ricotta
  • 2 cups flour
  • 1/2 packet baking powder
  • 1 1/4 cups vegetable oil (for frying)
  • as needed powdered sugar (for decoration)

How to prepare Orange Castagnole

  • Wash the orange, dry it, and grate its zest. Then squeeze the orange to obtain the juice. In a bowl, mix the egg with the sugar simply using a fork. Add the ricotta, zest, and juice of the orange.

  • Mix and finally add the sifted flour and baking powder. Start mixing with a fork, and when the dough gains consistency, knead it with your hands to obtain a soft but not sticky dough. Cover the bowl with plastic wrap and let it rest at room temperature for 30 minutes.

  • Transfer the dough onto a lightly floured board. Take a portion of dough and roll it to form a roll of 1/2 inch thick.
    Cut into small pieces of 1/2 inch and roll them between your hands to form small balls. Shape them all until you finish the dough.

  • Heat abundant vegetable oil in a small deep pan. Dip a few balls at a time into the hot oil, letting them brown well on all sides. Remove them with a slotted spoon and let them drain on kitchen paper. Let them cool and decorate with plenty of powdered sugar.
