Light and Delicious Carnival Roses

Carnival roses for a sweet carnival. The best thing about carnival for me is the Sweets, strictly fried, light, and delicious. I confess that as a child I didn’t like ‘chiacchiere’ then over time I learned to appreciate them, especially when I started making them for my little one’s carnival parties and then it was love! Very thin sheets decorated with lots of powdered sugar. After many Chiacchiere Recipes today I want to tell you about a delicious and special version: the Flower Chiacchiere, very easy to prepare. Three discs of different sizes attached in the center that, when plummeted into boiling oil, puff up, creating perfect puff pastry flowers to decorate simply with powdered sugar, but also with honey or custard. Ingredients for Chiacchiere Roses

  • 2 eggs
  • 2 tbsp sugar
  • 1.5 tbsp butter
  • 2.5 cups all-purpose flour
  • 2 tbsp limoncello (or grappa)
  • 1/2 orange zest (or lemon)
  • 1.5 cups vegetable oil (for frying)
  • 1 pinch salt
  • to taste powdered sugar (for decorating)

What You Need to Make Chiacchiere

  • Cutters
  • Pasta Maker

How to Make Flower Chiacchiere

  • You can prepare the chiacchiere dough by hand or with a mixer. Pour the flour, sugar, grated zest of half an untreated orange, and a pinch of salt into a bowl. Then add the melted butter, eggs, and limoncello or another liquor.

  • Mix first with a fork and then with your hands. You need to get a soft but not sticky dough, if necessary add a little more flour. Form a loaf, wrap it in plastic wrap and let it rest for an hour at room temperature.

  • Take the dough and divide it into 6-7 portions. With the help of a pasta machine, form many very thin sheets. Proceed from a wider setting to a gradually thinner one. The secret to perfectly making Light and Bubbly Chiacchiere is to work the dough: stretch it, fold it, and stretch it again 5-6 times and then roll it into a very thin sheet.

  • With the help of 4 round cutters of different sizes, cut out many discs. Place 4 discs of decreasing size on top of each other and press in the center with the handle of a wooden or silicone spoon. This way the dough discs will stick together in the center.

  • Prepare them all in the same way. Now all you have to do is plunge them a few at a time into the boiling vegetable oil. I always prefer to use a small, deep pan. Drain them upside down on paper towels and sprinkle them as you like with plenty of powdered sugar.

See you tomorrow with a new recipe, hugs, Loredana

Loredana’s Tips

For a lighter dessert, you can bake the flowers in the oven at 356°F for 12-14 minutes or until golden brown. They will be less crumbly but definitely lighter

They are perfect simply decorated with powdered sugar or with honey, melted chocolate, or a dollop of cream in the center
